Shirley DeSantis's Potato Flan Ole 2 cups hot mashed potatoes (Instant ok) 1 egg 1/2 cup all-purpose unbleached flour 1/4 cup yellow cornmeal 1/2 tsp black pepper 4 to 5 Tbsp olive oil 1 cup bottled picante sauce 1 cup shredded cooked poultry 1 cup Monterey jack cheese with jalapeno peppers (or cheddar, plain). Shredded. 1 Tbsp chopped fresh cilantro. Sour cream/guacamole garnish. Preheat oven to 375. Grease pie pan (PAM it). Mix together mashed potatoes and egg in large bowl until smooth. Add flour, cornmeal, pepper and 2 to 3 Tbsp olive oil. Stir well until mixed. Press evenly into bottom and sides of pie pan. Bake crust for 15 mins. Spread sauce or salsa over bottom of crust. Arrange poultry over sauce. Sprinkle with cheese and cilantro on top. Drizzle remaining olive oil over top. Bake in same 375 oven for about 20-25 minutes or until cheese is melted and lightly browned. Cut into wedges and serve hot with sour cream/guac. Family Circle
