Baked Orzo Casserole 1 cup orzo, freshly cooked 1 cup grated Monterey Jack cheese 1/2 cup diced red bell pepper 1/3 cup canned diced green chilies, drained 1 cup sour cream 1/2 cup grated Parmesan cheese 2 Tbsp butter Position rack in upper third of oven and preheat to 450. Lightly butter 1 1/2 quart souffle dish. Combine pasta, Jack cheese, bell pepper and chilies in prepared dish. Spread sour cream over. Sprinkle with Parmesan. Dot with butter. Bake until golden and puffed, about 15 mins. Serve immediately. Serves 6. Bon Appetit, December 1986
